These healthy, 4-ingredient cookies are perfect for on-the-go snacks or for packing in a lunch bag.

Good to Know
Dark chocolate is rich in heart-healthy antioxidants, oats are filled with fiber, and peanut butter gives you a delicious dose of protein.


Ingredients
2 tablespoons peanut butter
2 tablespoons 1% low-fat milk
1/4 cup semisweet chocolate chips
3/4 cup old-fashioned rolled oats


Preparation
Place peanut butter, milk, and semisweet chocolate chips in a saucepan; cook over low heat until chips melt (about 3 minutes).
Stir in oats; remove from heat. With a spoon or melon baller, drop 8 ball-shaped portions on a wax paper-lined baking sheet; let set in refrigerator 10 minutes before serving.

🕑 Cook time: 0 hours 30 minutes 🍽️ Servings: 8 servings ✨ Ingredients • 3 cups riced cauliflower from about 1 ¼ pound or ½ medium head cauliflower or thawed frozen riced cauliflower • 1 large egg • ¾ cup shredded sharp cheddar cheese • ¼ cup grated Parmesan • ½ teaspoon kosher salt • ¼ teaspoon ground black pepper • ¼ teaspoon garlic powder • ¼ teaspoon onion powder • ¼ teaspoon smoked paprika or ⅛ teaspoon cayenne pepper • Non-stick cooking spray ✨Directions: 1 - Microwave the cauliflower rice. Cool the rice on a towel. 2 - Use the towel to squeeze moisture from the rice. 3 - Beat the egg in a mixing bowl. Add the cheeses and spices. 4 - Stir in the cauliflower. 5 - Create hash brown patties and lay them on a baking sheet. 6 - Bake at 400 degrees F for 15 minutes, rotating the pan halfway through. Broil on LOW for 5 minutes. Don’t let them burn. ENJOY!
