An easy-to-make soup, perfect for warming you on a winter lunchtime.

2-3 carrots
1 celery stalk
1 onion
1 red pepper
1 tin of chopped tomatoes
1 packet of passata
Vegetable stock (litre)
Basil fresh or dried

Add all ingredients into a pot and simmer until the vegetables are soft. Blend the mixture using a hand blender.

Once soup is ready, our into a bowl and add some basil to garnish.
